The Takaharu 8-inch Chef Knife is the second addition to what is easily the most beautiful knife series in the Aikido Steel collection. Like its more shapely sibling, the Takaharu Kiritsuke, with its exquisite, defining VG-10 stainless steel blade, the Takaharu 8-inch Chef Knife can handle a variety of kitchen tasks, from chopping to slicing to filleting, with incredible ease and precision.

With the Takaharu Series you can't go wrong - choose the shape you prefer: the more Western influenced 8-inch Chef Knife or the similarly sized but Japanese-inspired Kiritsuke. Every knife in the Takaharu Series is made from 33 layers of stainless steel folded and forged uniquely around a core of VG-10 steel. The resulting blade has a total of 67 layers of metal and is incredibly strong and resilient.

Even more notable is that every Takaharu Series handle we produce is completely unique. Each handle undergoes a distinct colorization process, which means the knife you receive will have a surprisingly unique color and pattern. Our blades are made of the highest quality stainless steel. 33 layers of stainless steel are folded and forged around a core of VG10 steel, resulting in a sharper, longer-lasting blade than other chef’s knives.

Our 8-degree oblique V-shaped blades are made from a high-carbon VG10 stainless steel core.

With 1% carbon composition and a Rockwell Hardness rating of 59, the AIKIDO Takaharu blades are twice as hard as other knives in their class.

Made with stainless steel, cleaning any AIKIDO knife is as easy as wiping it gently with a wet sponge or cloth.

Handle: Our unique colorization process means that every handle we produce is completely different. Each handle undergoes a special stabilization process during which the wood is filled to the core with colored resin. This process not only yields a unique pattern of colors but also provides better durability than traditional wood. Because high-quality stabilized wood absorbs very little water, it is less prone to warping and cracking.

Note: we cannot predict the color or pattern of the handle you will receive.

Love this knife. The handle is comfortable (and beautiful) and I was pleasantly surprised by the color I received. Blade is super sharp out of the box so be careful and it cuts effortlessly (so again be careful!)

I have a million crappy knives that look like your standard black handle, stainless steel blade, blah blah. This was the first knife I purchased as an investment and I am more than happy with what came out of the box. The shape of the handle seems weird at first but as soon as you hold you realize why it's been designed with the octagonal shape...it's just super comfortable and makes your hand feel less tired, hard to explain ha! Of course the blade is sharp out of the box. I'm vegetarian so we chop a lot of veggies, fruits, roots, potatoes - this thing handles them all with ease. Great great deal.
