The Takaharu Series of Aikido knives are easily the most beautiful from our collection. Beyond the visual, the Takaharu Kiritsuke and Takaharu Chef knives included in the Takaharu 2-Piece Knife Set, with their exquisite, defining VG-10 stainless steel blades, can handle a variety of kitchen tasks, from chopping to slicing to filleting, with incredible ease and precision.
Every knife in the Takaharu Series is made from 33 layers of stainless steel folded and forged uniquely around a core of VG-10 steel. The resulting blades have a total of 67 layers of metal and are incredibly strong and resilient. Even more notable is that every Takaharu Series handle we produce is completely unique.
Each handle undergoes a distinct colorization process, which means the knife you receive will have a surprisingly unique color and pattern. Owners of our Takaharu knives will be able to proudly use a one-of-a-kind, professional grade knife in their kitchens.

Blade: 8-degree V-shaped kiritsuke blade. Made with 33 layers of stainless steel, folded and forged around a high-carbon VG10 steel core. The blade core is composed of 1% carbon and rated 59 HRC on the Rockwell hardness scale.
Handle: Our unique colourization process means that every handle we produce is completely different. Each handle undergoes a special stabilization process during which the wood is filled to the core with coloured resin. This process not only yields a unique pattern of colours, but it also provides better durability than traditional wood. Because high quality stabilized wood absorbs very little water, it is less prone to warping and cracking.
