The Signature 7-inch Nakiri represents yet another Japanese culinary paradigm that is seldom found in Western kitchens.  The most distinctive feature of any Nakiri is its long flat edge which is designed to maintain continuous contact with your cutting board with every knife stroke.  While other chef knives may be fashioned with curved blades, the shape of the Nakiri is such that, when you slice your ingredients, you don't end up creating an accordion out of them.  That is, no more little threads of vegetables clinging to each other when your intention is to pull them apart.  Get perfect, complete slices with every cut.
