Like it's smaller sibling, the 5-inch Santoku knife, the 7-inch variety is very well-suited to slicing wet, starchy foods.The carefully designed blade creates air pockets as you cut, so food doesn’t stick to the blade surfaceThis makes it excellent for vegetables, fish, and boneless meats.

The Signature 7-inch Santoku is great for large jobs where speed, volume, and efficiency trump the need for precision and control when slicing ingredients.  A larger knife like this can be excellent for slicing or chopping:
